Here’s a sixties’ throwback…

First in a non-stick frying pan I sautè some chopped onion in olive oil. Then I add a cupful or so of sliced mushrooms, season and cook till all their liquid has been absorbed. I then add a glass of red wine and when that has reduced, I push the vegetables to one side and sear three fillet steaks which I have smeared with Dijon mustard. I cook about 5 minutes to medium rare. Finally, a tablespoon or two of cream ties all the flavours together.

That evening I actually didn’t have any cream; I could have tried using yogurt but didn’t want to risk it!  Anyway, even without the cream it wasn’t bad.
