lemon cake


It’s raining today, a piece of cake would be nice at tea-time!

I pre-heat the oven to 170°C. I mix the following ingredients one by one in a large mixing bowl: 2 eggs, 5 tablespoons of sugar, 5 tablespoons of melted butter, 5 tablespoons of milk, the juice and peel of a lemon (or an orange), 10 tablespoons of flour and a good teaspoon of baking powder. I pour the mix into a buttered and lined cake tin. It takes 15 to 20 minutes in the oven. I cool it on a rack and dust with icing sugar before serving.

The cake is low, it’s meant to be that way!
